Yields 10 servings
Ingredients for the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Drink (makes 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing
Directions
Making the Citrus Syrup: Put every components into a pot, bring to a light boil, agitating so the sugar melts. Then, remove from the stove and leave to reach room temperature completely. Pour into an sterilised bottle, close it and store in the fridge, where it will keep for around four weeks.
To make Cocktail Base: Combine all the spirits and syrup in a sizeable container, allow it to infuse for 60 minutes, then strain best through a fine cloth, to ensure it's perfectly clear.
When ready to serve: Measure 85ml from the cocktail base into your cocktail shaker filled with ice, and agitate gently for about 60 seconds to chill. Filter to a chilled martini glass or a similar vessel, top with the cranberries and finish by giving it a brief mist with the mandarin essence over the top.
